Gluten Free, GF, What foods have gluten hidden in them? Is there gluten in M&Ms?, Is there gluten in ketchup? For a population that loves to bash bread as the enemy and resort to gluten, keto, casein, and other free diets, we don’t possess a solid, rudimentary understanding of what gluten is.
One year ago, I could include myself in the cohort of people that did not understand how wheat and gluten were very much different things. For the past 9 months, I’ve been attempting to rifle through multitudes of peer reviews, empirical studies, editorials, letters and anecdotes to figure out what is really going on with bread. And if I should rethink my choice to produce exclusively gluten containing products in my free time.
So, I hope you enjoy this, my Serial or “Cereal” that toys with the mystery behind the protein gluten, what it does, what it might do, and why it may not be the culprit for non-celiac gluten free eaters after all.
